Nana’s Chickpea Sweet Potato Curry Ingredients:

  • 1 onion in quarters
  • 2 cloves garlic
  • 1 tin chopped tomatoes
  • 1 dessert spoon of curry paste
  • A splodge of Agave syrup
  • Teaspoon Cumin powder
  • Salt and pepper
  • Bunch fresh coriander, chopped
  • Spinach or sweet potato
  • Basmati Rice
  • Half a teaspoon of Turmeric
  • Olive oil
  • Tin drained and rinsed chickpeas
  • Tomato puree
  • Sweet potato

Peel and dice the sweet potato. Put in a pan of salted boiling water 1 inch
Boil for 5 mins until tender. Drain.
Put a pan of water on the heat, with half a tsp Turmeric and a couple of tsp of salt for rice

Add the following to a blender or liquidiser:

  • onion
  • garlic
  • tomatoes
  • curry paste
  • agave syrup
  • cumin powder
  • Salt and pepper
  • Blend.

Nana’s Chickpea Sweet Potato Curry Recipe Method:

  • Place the oil into a saucepan, add the mix, and heat.
  • Add chickpeas
  • Add 2 handfuls spinach (washed and dried) if available
  • Add sweet potato
  • Add chopped coriander (leaving a little for sprinkling)
  • Heat thoroughly
  • Serve on a bed of rice

If needed add a cayenne pepper, according to how spicy you like your curries.
