We all love a pizza, this one is no exception! A thin scone base, topped with a very simple tomato sauce and cheese. Use up leftover bits and pieces from the kitchen such as onions, ham, peppers, etc to make a scrumptious weekday meal.

This store cupboard pizza is quicker and healthier than any bought pizza. They’ll save you a fortune too. This is a perfect family dinner recipe.

Nana’s Store Cupboard Pizza Serves:

  • 4 – 6 depending on how hungry you are!

For quickness, I have always used a scone base for my pizza as you don‛t have to let the dough rise and therefore there is less forward planning required. This recipe is perfect when you are busy and need something for the family that is tasty and quick, and all the ingredients are in usually in the cupboard.

Store Cupboard Pizza Recipe Ingredients:

For the base

  • 2 ½ cups (375g) self-raising flour
  • A quarter teaspoon salt
  • 30g butter
  • ¾ cup (180ml) milk
  • ½ cup (125) water, approximately

For the Tomato Sauce

  • 1 tablespoon olive oil
  • 1 medium (150g) onion chopped
  • 2 cloves garlic, crushed
  • 425 can tomatoes (Chopped)
  • Half a cup (125ml) tomato paste
  • ¼ cup chopped fresh basil
  • 1 teaspoon sugar

For the topping

  • 1 large tomato (sliced)
  • ¾ cup of grated cheddar or similar hard cheese
  • Anything else that is in the cupboard of your choosing i.e. Sardines, tuna, sweet corn, pineapple, etc. Use your imagination!

Store Cupboard Pizza Recipe Method:

For the base: Grease a flat strong baking sheet 32cm square and dust with flour. Shake to remove excess.


Nana’s Store Cupboard Pizza Recipe

Sift the flour sugar and salt into a large bowl; rub in the butter with your fingertips. Use a knife to stir in the milk and enough water to make a soft, sticky dough. Turn the dough onto a lightly floured surface; knead quickly and lightly until the dough is smooth. Put the dough onto the floured greased baking tray and with your lightly floured hand press the dough out to reach the sides of the baking tray. Try to make this as even and smooth as possible.

Make the tomato sauce:

Heat oil in a pan, add onion and garlic, cook, stirring until the onion is soft. Stir in undrained crushed tomatoes, paste, basil, and sugar, simmer uncovered about 5 minutes or until thickened. Spread pizza base with tomato sauce, leaving a 3cm border.

Top with toppings of your choice from your store cupboard or fridge and place sliced tomato over the base sprinkle liberally with the grated cheese. Drizzle the top of the pizza with a little extra olive oil. Bake in a very hot oven for about 20 minutes, or until golden and bubbling.

Serve cut into wedges with a good mixed salad.

Store Cupboard Pizza Recipe Special Tip:

Make double quantities and freeze the assembled uncooked pizza. (Before the baking and drizzling with oil) You will then have a lovely homemade pizza to take from the freezer, unwrap and place on a baking sheet and cook in a very hot oven for 20 minutes or until golden and bubbling.

Make sure the centre is piping hot before serving. These are always a good standby to have in the fridge, especially if you just want to cuddle up with your partner in front of the telly, after a hard day.
